Traditional maceration and refining, a Superior wine

Material vinification is a tribute to the skills of the artists who, with the clay from the lands of Monferrato, shaped artworks enriched with culture and tradition.

    Submerged cap vinification, an ancient technique used in Monferrato, involves prolonged skin maceration during the fermentation process.

     

      This practice aims to extract intense colors, rich aromas, and structured tannins from the grape clusters, creating wines with distinctive character.

       

        Paolo Sartirano recognized the value of this tradition and decided to go further, giving birth to the concept of material vinification.

        100% Barbera.

        • Destemming without crushing the berries.
        • Fermentation with pumping over, maceration for 20 days on the skins.
        • Aging for 6 months in French oak barrels.

          A deep ruby red that captures the eye.

          To the nose, a complex bouquet of ripe black fruits and spices, resulting from the long skin maceration.

          On the palate, elegant tannins and a enveloping structure, shaped by barrel aging, reveal the oenological mastery and richness of the territory without sacrificing the purity of the fruit.
